I truly believe there is no easier way to cook than to plop everything into the marvelous crockpot slow cooker, pressing a button, and walking away.

Sometimes crockpots seem synonymous with gloppy, heavy, and calorie-laden food.

Let’s fix that.

There is no reason that you can’t eat healthy and light food, day in and day out, and STILL use the best kitchen appliance ever invented.

I have been writing crockpot slow cooker recipes for the past 8 years, and have fielded hundreds (if not thousands, I’ve never counted!) of requests for “diety” type slow cooker recipes.

BUT.
