I am always looking for a great tasting, easy to make, gluten-free pizza dough mixes.  I had never tried Pamela’s until now.

Pamela’s makes so many wonderful mixes!  I have really liked all of the Pamela’s mixes I have tried so far!

 Instead of using my sample mix to make a pizza, I decided to try the dinner roll recipe on the bag!  Since I don’t have a stand mixer, I decided to use my bread maker to mix the ingredients together.  I added some garlic powder, dried oregano and basil.

After mixing the dough, I covered it with plastic wrap and let it rise until it was double in size.  Then I rolled the dough into little balls, placed them on a parchment paper covered cookie sheet and baked them!  They came out really good.

Hello Everyone!  I hope your week is going well so far.  It’s half-way over!  ;-)

Today, I am happy today to be re-reviewing “Allergy-Free and Easy Cooking: 30-minute meals without gluten, wheat, dairy, eggs, soy, peanuts, tree nuts, fish, shellfish, and sesame” by Cybele Pascal.  I first reviewed this book back in December.  You can check out my  original review HERE.

When I am asked to re-review a cookbook, I think it’s really nice to be able to make one of the recipes from the book.  So for this review, I decided to make Buffalo Wings with Ranch Dressing.

I have never fried chicken wings, only baked them because I’m totally afraid of hot oil on the stove!  I enlisted my hubby to help me with this part.  It really wasn’t bad.  I would suggest a splatter screen (which I don’t have) to keep the mess down a little.

I served the wings with celery sticks and because we are not dairy free, blue cheese dressing.  If you are dairy free, there is a great recipe for dairy free ranch dressing!

These wings turned out great!  I probably will even try them again, now that we have the frying part down! ;-)

I had such a hard time deciding what to make with my sample of Pamela’s Artisan Flour Blend, that I finally asked my family what they would like me to bake.  The answer?   CHOCOLATE CHIP COOKIES!

But of course!  ;-)

I followed the recipe on the bag of Pamela’s, with one exception.  I used one stick of butter and one half cup of unsweetened applesauce instead of two sticks of butter.  I like to do that when I bake to cut down the fat and add some fruit!  I also left out the optional nuts.

I mixed everything together…

These cookies came out perfect.  They are crunchy on the outside, all soft and chocolatey on the inside.

I decided this time to make oatmeal peanut butter cookies.  I followed the instructions on the back of the package,  adding an egg and butter, but instead of using 1/2 cup of butter, I cut back to 5 Tablespoons and added 1/2 cup of chunky peanut butter.

 

Yes, I should have creamed the butter and peanut butter together, but I didn’t.  It was a little harder to mix, but came out fine in the end!

 

Using parchment paper definitely makes clean-up so easy!

 

 

Everyone loved the taste of these cookies!

Have you tried Pamela’s Biscuit & Scone Mix yet?  I think of all of Pamela’s mixes, this is my very favorite.  Maybe because I *love* scones.  Yes.  I do.

 

I reviewed Pamela’s Biscuit  & Scone Mix back in October HERE.  Back then, I made cranberry-walnut scones.

 

This time around, I considered making something other than scones, but when it came right down to it, I really, really just wanted more SCONES!  :-)

 

As I have said before, I love the simplicity of Pamela’s mixes.  I decided to make cinnamon-raisin scones.  I followed the instructions on the bag, adding sugar, butter, milk and raisins.  I also added a teaspoon of cinnamon to the dry ingredients.

 

 

I shaped the dough into a round on greased parchment paper and cut into wedges and sprinkled the tops with a little sugar.

 

 

I baked the scones according to the directions.  They came out perfect!  Crunchy on the outside, moist on the inside.  Yummy!!!

Sunday is Easter.  Have you made any Easter goodies yet?

I don’t usually make a lot of baked goods at Easter time, only because there is usually so much candy in the house that I feel any extra calories from cakes and cookies are not necessary.  But when I received my sample of Pamela’s Sugar Cookie Mix in the mail, I decided it would be nice to try some Sugar Cookie Bars from the recipe on the side of the bag.

The nice part about making sugar cookies from Pamela’s mix is that the only ingredients I needed to add were a stick of butter and an egg.  I didn’t have to run out to the store to purchase anything else!

I cut the butter in with an old-fashioned pastry cutter and a little elbow grease.

I added the egg and mixed with my hands until the dough was formed.  Then I pressed the dough in a greased pan and added some pretty, pastel sugar sprinkles to make them look festive.

I baked them, waited for them to cool a bit, and then cut them into rectangle cookie bars.  They were a little crumbly, so I had to use care taking them out of the pan.

 

I was very happy with the way these cookie bars turned out.  They have a nice, vanilla cookie flavor and a texture that reminded me of a shortbread.
