You may already know Alexa “Lexie” Croft from her great blog LexiesKitchen.com.   Lexie began developing recipes to help her toddler son, who had intestinal and neurological issues.  She learned that he had food allergies and sensitivities and so she decided to change his diet to help him heal.  What she came up with are delicious, healthy meals, perfect for anyone needing to eliminate certain foods from their diets.

Are you ready for a whole different kind of cookbook?  Do you like kale, but are tired of the same, old, boring kale chips?

“Fifty Shades of Kale: 50 Fresh & Satisfying Recipes That Are Bound to Please” by Drew Ramsey, M.D. & Jennifer Iserloh, will make you laugh as well as teach you how to make delicious kale dishes!

Now, just to let you know, I haven’t read those other “50 Shades” books, but I have heard plenty about them!  Not that I wouldn’t read them, it’s just that I really prefer cookbooks, health-related books and, well, murder mysteries!  ;-)  So this “50 Shades” cookbook is right up my alley!

The first thing that grabbed my attention when I opened the book was the table of contents.  With chapter titles such as “Submit To Her Charms” and “Morning Quickies”, I couldn’t wait to see what kale delights lie ahead!  Since my only experience with kale has been kale chips and kale smoothies, I admit I didn’t really know what else to do with the bitter, green veggie.  Boy, did I learn a lot!

Some of the recipes I’d like to try are:

  • Huevos Rancheros
  • Grilled Cheese ‘n Kale
  • Chicken Enchiladas
  • Beef and Kale Tacos
  • Chocolate Kale Fudge Pops (yes!)

Not only are there great recipes and stuff to make you giggle in this cookbook, but also tantalizing photos!

I am so happy about today’s giveaway.  I reviewed Bella Sun Luci Sun Dried Tomato products last October.  You can see my review HERE.

You can find these tomatoes at your friendly neighborhood grocery store, or Amazon carries a few of their products.

We love these products at our house.  Our favorites are the Sun Dried Tomato Pesto and the Sun Dried Tomato Bruschetta.   My husband also really likes the Tomatoes with Zesty Peppers on top of his salads.

Sun Dried Tomato and Shrimp Pasta with Artichokes & Mushrooms – Winning
Recipe 2012! (From Bella Sun Luci’s website)

  • ¾ cup Bella Sun Luci Julienne Cut Sun Dried Tomatoes in Olive Oil & Herbs
  • 1 large shallot, chopped
  • 2 teaspoons minced garlic
  • 1 lb. shrimp (medium to large)
  • 12 ounces marinated artichoke hearts, quartered
  • 8 ounces sliced fresh mushrooms
  • 1-2 Tablespoons butter
  • ½ cup dry white wine or chicken broth
  • 12 ounces angel hair pasta
  • Pinch crushed red pepper, or to taste
  • ½ cup grated Parmesan cheese

Instructions

  • Coat large deep sauté pan with olive oil and heat on medium. Add garlic and chopped shallots and sauté until tender (approx 5 minutes).
  • Bring water to a boil. Cook pasta according to directions and drain, reserving 1/2 cup of the pasta water for later.
  • Add sun dried tomatoes, artichokes, shrimp, mushrooms, and butter to garlic/shallot mixture.
  • Combine and cook until shrimp turn opaque approximately 5 minutes.
  • Add wine or chicken broth and reduce to simmer. There should be enough liquid to generously coat pasta.
  • Add pinch of crushed red pepper to taste.
  • Add ½ cup reserved pasta water to shrimp mixture and stir.
  • Add drained pasta to shrimp mixture and combine well.
  • Plate and top with grated cheese to serve.

Doesn’t that sound delicious?  Yes!

Ho Ho Ho!  I love the holidays and all of the great holiday products that come out at this time of year!   What flavors could say “holidays” more than Apple Cider, Eggnogg’n, Ginger Snappish and Pumpkin Spice? Bigelow Holiday Teas are the perfect addition to your holiday traditions.   Sitting by the fire with a plate of cookies and a cup of Eggnogg’n tea.

A cup of Ginger Snappish and a bowl of piping hot oatmeal for breakfast.  A sip of Pumpkin Spice tea with that slice of pumpkin pie that your grandma brought over,  A big mug of Apple Cider tea after  a day of sledding with the kids.

  Did you know you can also cook with tea?  Bigelow has some great recipes on their website.    I’ve been enjoying Bigelow Pumpkin Spice Tea ever since I received my sample in the mail.  I love the flavor so much, I decided to try one of the many gluten-free recipes, Hot Pumpkin Spice Buttered Toddy.  Now, I know what you are thinking.  This isn’t really “cooking” with tea.  Well.  You figured me out.  I didn’t feel like cooking last night.  I just wanted to sit down, read a little and have a nice after-dinner drink.  This recipe is easy and delicious!!!

Hot Pumpkin Spice Buttered Toddy

Ingredients:

6 tea bags Bigelow Pumpkin Spice Tea* 6 cups (48-ounces) hot water

Spiced Butter:

¾ cup light brown sugar ½ cup butter,

softened 1 teaspoon pumpkin pie spice

½ teaspoon vanilla extract

1/8 teaspoon salt

8 to 12-ounces (1 to 1 ½ cups) clear rum

Whipped cream, optional Extra pumpkin pie spice, optional

Instructions:

In large glass batter bowl, place tea bags; add hot water.  Brew for 4 minutes.  Squeeze tea from bags then discard bags. Meanwhile, in small mixer bowl add all Spiced Butter ingredients; beat at medium high speed, scraping bowl occasionally, until light in color (1 minute). In 6 mugs or heat-proof glasses, place 2 tablespoons spiced butter, 2-ounces rum, and 6 ounces hot brewed tea.  Mix until Spiced Butter melts. Garnish with whipped cream and a dusting of spice,  if desired.

  I cut the recipe to make only enough for two cups, one for my hubby and one for myself.  We both drank it down!  Sooo good!   You can also substitute some of the other holiday teas:

 

*Variations: Try using  Bigelow Eggnogg’n Tea   or Bigelow Apple Cider Herb Tea

 

 

I think I will try both!!!  I’ll even bet that you could put all the ingredients in a slow cooker and serve it at a party!  Yum!   Bigelow Holiday Teas are available on their website, along with some BEAUTIFUL gifts such as gift baskets and teapots for that tea lover on your list! Bigelow Teas are also sold at stores near you!

Did you know that mustard is good for you?

I’m not a huge mustard fan.  I’m more of a ketchup girl.  I do like mustard in salad dressing and in “deviled” egg and potato salads.  I did take a taste of Colman’s when it arrived so that I could give you an honest review.  I realized that I probably should have had the mustard mixed with mayo or on a sandwich instead of right from the jar.  It has quite the kick!  I could really taste the horseradish.  I’m definitely going to put some in my next egg salad!

Since we were having “sandwich night” that evening, I put the jar of Colman’s Mustard on the table.  My hubby is definitely a mustard guy.  He slathered the mustard on both slices of his bread and added sliced turkey, Swiss cheese and bacon.

He LOVED it!  He liked it so much that when his sandwich was finished, he put some more mustard on a slice of cheese and ate it!
