Today’s review is “The Joy of Gluten-Free, Sugar-Free Baking“ by Peter Reinhart & Denene Wallace.
Having to be on a special diet is not easy. Learning to bake when you are gluten-free can be difficult. Learning to bake when you need to be both gluten-free AND sugar-free is even more daunting! What flours do I use? What sweeteners can I use and how much? This great cookbook answers all of those questions and more.
First, let me tell you a little bit about the authors.
Peter Reinhart is a baking instructor at Johnson & Wales University. He was the co-founder of the legendary Brother Juniper’s Bakery in Sonoma County, California, and is the author of five books on bread baking, including Brother Juniper’s Bread Book and the modern classic The Bread Baker’s Apprentice, which was named cookbook of the year in 2002 by both the James Beard Foundation and the International Association of Culinary Professionals.
Denene’s original intent was to create bakery products in her kitchen that would help her manage blood sugar issues. She was taking 5 insulin shots a day to control her blood sugar. Now Denene takes NO insulin shots.
She discovered over the years that these products could also be of great benefit to those who suffer from wheat sensitivity (celiac). As a result of her personal experiences, Denene also believes that these types of products can be an additional tool in achieving and maintaining an individuals’ ideal weight.
Having been an Interior Designer for over 15 years, Denene of course, approached her bread baking projects from an artist’s vantage point – NO RULES. She experimented with a variety of alternative flours and ingredients. Over time she was able to create excellent tasting bakery products that were sugar free, gluten free, and very low in carbohydrates.
Over a six year period Denene has become an expert in the arena of baking with alternative flours. She has created and perfected products that provide diabetics and celiac patients with a delicious alternative to conventional bakery goods.
Pretty impressive credentials, right?

“The Joy of Gluten-Free, Sugar-Free Baking” is a “must-have” cookbook for anyone who is sensitive to gluten, diabetic, or needs to reduce carbs to prevent illness or lose weight. The recipes in this book can also easily be made vegan by following the dairy and egg substitution guidelines.
These recipes are easy to follow and use readily available nut and seed flours and alternative and natural sweeteners. This is a beautiful cookbook, with beautiful photos by Leo Gong.
