People always ask me what I can eat on the gluten-free diet.  I think a lot of people think that being gluten-free must be boring and that everything gluten-free must taste terrible.  Wait until they see this new eCookbook!

“Stack’d: The Gluten-Free Protein Pancake Cookbook” by Jessica Kahn had me drooling as soon as I saw the cover photo.  You may remember Jessica from her yummy kitch + table gluten-free pizza and brownie mixes.  I previously reviewed the mixes HERE and HERE.

Jessica has now compiled an eCookbook full of her delicious, gluten-free protein pancake recipes guaranteed to make your breakfast, lunch, dinner or dessert more healthy.

What is an “eCookbook” you may ask?  Well, it’s a cookbook that can be downloaded to your Kindle, Nook, iPhone or iPad.  There’s even a .PDF version on etsy!  You can have your eCookbook wherever you go!

Check out these great pancakes from the “Stack’d” eCookbook.

Hello Everyone!  It’s so good to be back, writing reviews and hosting giveaways!  I have missed you all!

For the first giveaway of 2013, I am pleased to offer two wonderful mixes from kitch+table!  I reviewed these mixes in October of 2012.  You can check out my review HERE.

I love, love, love these mixes.  They are both so easy to use and come out so delicious!

Jess of kitch+table graciously sent me two more mixes so that I could try to use them in a different way than last time.   Thank you, Jess!  I love to experiment!

Since my daughter just couldn’t wait for me to make the brownies, I started with the Double Chocolate Brownie Mix.  Instead of making pan brownies, I decided to try making brownie bites, using mini muffin tins.

The only problem with experimenting is that sometimes things don’t turn out exactly as you planned.  The good thing is that most of the time you can fix whatever went wrong and still come out with something great!

That is what happened with my brownie bites.  I decided to spray my muffin pans with cooking spray instead of using paper muffin cup liners.  My brownie bites ended up sticking to the pan.

Not to worry!  I scooped them out, plopped them into paper liners and frosted them with homemade buttercream frosting (tinted green for St. Patty’s Day!)

TA DA!  They are pretty and yummy and just a little messy to eat, but who cares???  My daughter was VERY happy.

Then, it was on to the Rustic Pizza Dough Mix.  I just have to say again, that this is the best gluten-free pizza dough I have had since going gluten-free.

It is so easy to whip up!  I decided to make a thin crust, rectangular pizza instead of a thick crust, round one.  I’m a little boring when it comes to pizza toppings.  I’m not a huge pizza sauce fan and I’ve been trying to avoid a lot of tomatoes lately due to stomach issues, so I opted for olive oil, basil, oregano, mozzarella and black olives as my toppings.  My favorite parts of a pizza are the cheese and the crust anyway!  ;-)

My pizza came out great!  I found it spread out into the cookie sheet very easily.  The crust is crunchy and chewy and you can pick it up with your hands to eat it!

I ate three slices and still have a lot left to put in the fridge to eat later.

As before, even though these mixes are gluten-free, I need to tell you that they are packaged in a facility that processes wheat, soy, milk, eggs & tree nuts, for those of you who may be sensitive to that.  I have eaten these products several times and haven’t any problems, but everyone is different.

I am so excited to be able to offer one of each mix to two lucky winners!

Review and Giveaway! kitch + table gluten-free double chocolate brownie mix and rustic pizza dough mix

Wednesday, October 24th, 2012 by Lisa

Monday, October 29, 2012 at 5pm PST.  This giveaway is now OVER.  Thanks to all who entered!  The winner has been randomly selected and notified via email.  Congratulations Carol!

Lisa Irvine writes at Lisa’s Blogety Blog. You can find her at @Lirvine98 on twitter. If you have an idea for a giveaway, please let her know!

Today I have a really, really yummy review!  I absolutely love to be able to go into the kitchen and make something quickly with just a few added ingredients.  There’s nothing better than to be able to whip up a batch of brownies on a Sunday afternoon or a quick pizza on a Friday night.  When you are gluten-free, it’s not always that easy.   Many times you may find yourself mixing two or three flours together, adding sugar and xanthan gum, only to have the final product not be as tasty as it should be.  I’ve been there.

Jessica Kahn to the rescue!  She has launched a new company, kitch+table, and come up with two “fool-proof” mixes that every gluten-free cook should have in their pantry.

The first mix is gluten-free double chocolate brownie mix.  Oh my gosh.  So easy to make and so delicious!  The mix ingredients are:

Sugar, Gluten-Free Flour Blend (white rice flour, non-GMO cornstarch, potato starch, brown rice flour, tapioca starch), Dutch Processed Cocoa Powder, Leavening (sodium bicarbonate, sodium acid pyrophosphate, monocalcium phosphate), Salt, Natural Flavors, Xanthan Gum.

All you need is to add the eggs and butter and stir!  Home-made, warm brownies in 35 minutes!  These came out so good that almost the entire batch was eaten in one afternoon by just our family of three!  Crazy good!  Fudgy and gooey, just how I like my brownies.

Then there is the gluten-free rustic pizza dough mix.

The ingredients are:

Gluten-Free Flour Blend (rice flour, potato starch, non-GMO corn starch, whole sorghum flour, tapioca starch, potato flour), Sugar, Olive Oil, Yeast, Salt, Egg White Powder, Xanthan Gum, Rice Vinegar Powder (maltodextrin, rice vinegar), Nonfat Dry Milk Powder, Guar Gum, Natural Flavors, Soy Lecithin, Rosemary Extract (antioxidant).

Guess what?  You only need to add one ingredient.  Water!

I chose basil pesto, sundried tomatoes and sliced mozzarella cheese for my toppings.

My pizza came out so delicious!  I can HONESTLY say that I haven’t had pizza crust this good since going gluten-free five years ago!  The crust is chewy without being doughy.  The bottom of the crust browned up wonderfully, just like a “regular” pizza crust.  I am so impressed!  It REALLY doesn’t taste or look like gluten-free pizza dough.  I really want to try adding some herbs to the dough next time to see if I can achieve more of a focaccia-style crust.  I think it would be great.   I will definitely be ordering up a bunch of this mix pronto!

I need to tell you that these mixes are packaged in a facility that processes wheat, soy, milk, eggs & tree nuts, for those of you who may be sensitive to that.  I can tell you that I didn’t have any problems with either mix, but everyone is different.

You really need to check out Jessica’s website and see all the beautiful photos (by Kaity Schwartz) she has.   My pictures can in no way compare to hers!

These mixes would make wonderful Christmas gifts for any gluten-free person on your list.  The packaging is so pretty, no need to even wrap them!

You can purchase both the  gluten-free double chocolate brownie mix ($5.99) and the gluten-free rustic pizza dough mix ($6.99) through the kitch+table website.

Jessica wants all of you to try her new mixes and has kindly offered to give away one of each mix to one very lucky, lucky reader!
