Today I have a really, really yummy review! I absolutely love to be able to go into the kitchen and make something quickly with just a few added ingredients. There’s nothing better than to be able to whip up a batch of brownies on a Sunday afternoon or a quick pizza on a Friday night. When you are gluten-free, it’s not always that easy. Many times you may find yourself mixing two or three flours together, adding sugar and xanthan gum, only to have the final product not be as tasty as it should be. I’ve been there.
Jessica Kahn to the rescue! She has launched a new company, kitch+table, and come up with two “fool-proof” mixes that every gluten-free cook should have in their pantry.
The first mix is gluten-free double chocolate brownie mix. Oh my gosh. So easy to make and so delicious! The mix ingredients are:
Sugar, Gluten-Free Flour Blend (white rice flour, non-GMO cornstarch, potato starch, brown rice flour, tapioca starch), Dutch Processed Cocoa Powder, Leavening (sodium bicarbonate, sodium acid pyrophosphate, monocalcium phosphate), Salt, Natural Flavors, Xanthan Gum.
All you need is to add the eggs and butter and stir! Home-made, warm brownies in 35 minutes! These came out so good that almost the entire batch was eaten in one afternoon by just our family of three! Crazy good! Fudgy and gooey, just how I like my brownies.
Then there is the gluten-free rustic pizza dough mix.
The ingredients are:
Gluten-Free Flour Blend (rice flour, potato starch, non-GMO corn starch, whole sorghum flour, tapioca starch, potato flour), Sugar, Olive Oil, Yeast, Salt, Egg White Powder, Xanthan Gum, Rice Vinegar Powder (maltodextrin, rice vinegar), Nonfat Dry Milk Powder, Guar Gum, Natural Flavors, Soy Lecithin, Rosemary Extract (antioxidant).
Guess what? You only need to add one ingredient. Water!
I chose basil pesto, sundried tomatoes and sliced mozzarella cheese for my toppings.
My pizza came out so delicious! I can HONESTLY say that I haven’t had pizza crust this good since going gluten-free five years ago! The crust is chewy without being doughy. The bottom of the crust browned up wonderfully, just like a “regular” pizza crust. I am so impressed! It REALLY doesn’t taste or look like gluten-free pizza dough. I really want to try adding some herbs to the dough next time to see if I can achieve more of a focaccia-style crust. I think it would be great. I will definitely be ordering up a bunch of this mix pronto!
I need to tell you that these mixes are packaged in a facility that processes wheat, soy, milk, eggs & tree nuts, for those of you who may be sensitive to that. I can tell you that I didn’t have any problems with either mix, but everyone is different.
