It’s that time of year again, when the little ghosts and goblins are wandering the neighborhoods looking for candy!

While Halloween is a lot of fun for most kids, it can be a really scary time of year for a kid with Celiac Disease.  Parents of kids with Celiac or any other food allergy or intolerance can tell you that making sure your child doesn’t eat something that will make them sick can be very challenging.

Explaining to a child who has been diagnosed with Celiac Disease or Celiac Sprue, can be difficult.  Little ones don’t always understand why they can’t eat the same foods as their friends and classmates.

Author Elena Torsiello’s new kids’ book, “Willie Villie Meets Casey Kramps in Sprueville: A Book About Celiac Disease”, can help a child understand their diagnosis and feel better about their new lifestyle.

“Willie Villie Meets Casey Kramps in Sprueville” is the story of a little boy named Casey Kramps, who has Celiac Disease.  He meets Willie Villie from the gluten-free planet, Spruton.  Willie helps Casey understand his new gluten-free diet.

I love that this book is fun to read as well as informative.  Kids will love it as well as adults who want to understand the gluten-free diet better.  Kids can share it with their friends, teachers, family members and other caretakers, so that they may understand why it is so important to follow the child’s special diet.

The book has great illustrations by Eileen Rothstein.

I had such a hard time deciding what to make with my sample of Pamela’s Artisan Flour Blend, that I finally asked my family what they would like me to bake.  The answer?   CHOCOLATE CHIP COOKIES!

But of course!  ;-)

I followed the recipe on the bag of Pamela’s, with one exception.  I used one stick of butter and one half cup of unsweetened applesauce instead of two sticks of butter.  I like to do that when I bake to cut down the fat and add some fruit!  I also left out the optional nuts.

I mixed everything together…

I used my tablespoon scooper to drop the dough onto a cookie sheet lined with parchment paper…

I may have even had one (or two) with my green smoothie.  (Shhhhhh!)

These cookies came out perfect.  They are crunchy on the outside, all soft and chocolatey on the inside.

Have you heard the buzz in the gluten-free community???  Glutino has introduced Toaster Pastries!!!  Remember those yummy, gluten-filled toaster pastries from your youth?  Well now you can enjoy a gluten-free version!

I was so excited when I received my sample of Glutino Toaster Pastries in the mail!  I couldn’t wait to try them.

I received two flavors, Apple Cinnamon and Strawberry.  I was pleasantly surprised with both flavors!

The crust is a little bit heavier than I remember the “regular” pastries to be, but still very good.  I decided that I liked them better when I heated them a little bit in the microwave.  Both the Apple Cinnamon and Strawberry fillings were very good.  I felt like I was eating a single serving piece of pie!

I loved these pastries with a cup of coffee as a mid-morning snack.  I was thinking that they would be great as a dessert, maybe heated up and topped with some ice cream or whipped cream!

Today’s review is The Joy of Gluten-Free, Sugar-Free Baking by Peter Reinhart & Denene Wallace.

Having to be on a special diet is not easy.  Learning to bake when you are gluten-free can be difficult.  Learning to bake when you need to be both gluten-free AND sugar-free is even more daunting!  What flours do I use?  What sweeteners can I use and how much?  This great cookbook answers all of those questions and more.

First, let me tell you a little bit about the authors.

Peter Reinhart

Peter Reinhart is a baking instructor at Johnson & Wales University. He was the co-founder of the legendary Brother Juniper’s Bakery in Sonoma County, California, and is the author of five books on bread baking, including Brother Juniper’s Bread Book and the modern classic The Bread Baker’s Apprentice, which was named cookbook of the year in 2002 by both the James Beard Foundation and the International Association of Culinary Professionals.

Denene Wallace

Denene’s original intent was to create bakery products in her kitchen that would help her manage blood sugar issues.  She was taking 5  insulin shots a day to control her blood sugar.  Now Denene takes NO insulin shots.

She discovered over the years that these products could also be of great benefit to those who suffer from wheat sensitivity (celiac).  As a result of her personal experiences, Denene also believes that these types of products can be an additional tool in achieving and maintaining an individuals’ ideal weight.

Having been an Interior Designer for over 15 years, Denene of course, approached her bread baking projects from an artist’s vantage point – NO RULES.  She experimented with a variety of alternative flours and ingredients. Over time she was able to create excellent tasting bakery products that were sugar free, gluten free, and very low in carbohydrates.

Over a six year period Denene has become an expert in the arena of baking with alternative flours.  She has created and perfected products that provide diabetics and celiac patients with a delicious alternative to conventional bakery goods.

Pretty impressive credentials, right?

“The Joy of Gluten-Free, Sugar-Free Baking” is a “must-have” cookbook for anyone who is sensitive to gluten, diabetic, or needs to reduce carbs to prevent illness or lose weight.  The recipes in this book can also easily be made vegan by following the dairy and egg substitution guidelines.

These recipes are easy to follow and use readily available nut and seed flours and alternative and natural sweeteners.  This is a beautiful cookbook, with beautiful photos by Leo Gong.
