People always ask me what I can eat on the gluten-free diet. I think a lot of people think that being gluten-free must be boring and that everything gluten-free must taste terrible. Wait until they see this new eCookbook!
“Stack’d: The Gluten-Free Protein Pancake Cookbook” by Jessica Kahn had me drooling as soon as I saw the cover photo. You may remember Jessica from her yummy kitch + table gluten-free pizza and brownie mixes. I previously reviewed the mixes HERE and HERE.
Jessica has now compiled an eCookbook full of her delicious, gluten-free protein pancake recipes guaranteed to make your breakfast, lunch, dinner or dessert more healthy.
What is an “eCookbook” you may ask? Well, it’s a cookbook that can be downloaded to your Kindle, Nook, iPhone or iPad. There’s even a .PDF version on etsy! You can have your eCookbook wherever you go!
Check out these great pancakes from the “Stack’d” eCookbook.
Peanut Butter, Banana and Chocolate Chip Pancakes (Mmmmmm!)
There are many more lovely recipes in “Stack’d”. You can view a sneak peak on the Stack’d website HERE and HERE on Scribd.

Hi everyone! Lisa, here. Can you believe it’s almost the end of the year already? The end of 2012 means that our Daily Reviews and Giveaways are coming to an end for now. Now, for the giveaway!!!
Breakfast is the most important meal of the day! What do you like for breakfast? I usually like either hot or cold cereal with fruit and almond milk.
Bob’s Red Mill, long known for their great gluten-free products, has a new breakfast option! Bob’s Red Mill Gluten-Free Muesli is not only great tasting, it is so good for you!
Before I tell you more about their Gluten-Free Muesli, let me tell you a little bit about Bob’s Red Mill!
From Bob’s website:
A leader in Gluten Free:
“For over 30 years, the Bob’s Red Mill family has been committed to providing the very best in Gluten Free flours, cereals, baking mixes and grains for our friends on Gluten Free diets. So you could say we know a thing or two about what it takes to make a wide variety of the best products available. You see, we thoroughly batch test every Gluten Free product in our quality control laboratory upon delivery, during production and after packaging.”
“To assure the integrity of all of our Gluten Free products, we adhere to a standard of no more than 19 parts per million of gluten. We’ve even built a separate Gluten Free packaging division complete with specialized machinery to make sure that our products maintain their purity–just as nature intended. By going to these lengths, we’re able to ensure that folks with wheat allergies, celiac disease and gluten intolerance can trust that our products are safe to consume.”
Bob On Gluten Free:
“Maintaining a gluten free diet isn’t a lifestyle choice for many Americans. It’s a medical necessity for those who have Celiac Disease. Gluten free diets have also been discovered by parents of autistic children to yield positive behavioral effects. We’ve responded to this growing need by increasing the number of gluten free products that we sell, now over 50 products, and offering unmatched selection and nutrition to those who depend on it most.”
I never, ever worry about whether I’m eating a “safe” gluten-free food, when I’m eating anything from Bob’s Red Mill.
Bob’s Gluten-Free Muesli is fantastic. It can be eating warm or cold. The best thing about it, at least in my opinion, is that you can make it in the microwave! Just put the Muesli in your cereal bowl, add water or milk, and cook it on high for 3 – 5 minutes.
Here is my bowl of hot Muesli with a little brown sugar and almond milk. Delicious and filling!
What’s in Bob’s Gluten-Free Muesli?
