I love, love, love these mixes. They are both so easy to use and come out so delicious!
Jess of kitch+table graciously sent me two more mixes so that I could try to use them in a different way than last time. Thank you, Jess! I love to experiment!
Since my daughter just couldn’t wait for me to make the brownies, I started with the Double Chocolate Brownie Mix. Instead of making pan brownies, I decided to try making brownie bites, using mini muffin tins.
The only problem with experimenting is that sometimes things don’t turn out exactly as you planned. The good thing is that most of the time you can fix whatever went wrong and still come out with something great!
That is what happened with my brownie bites. I decided to spray my muffin pans with cooking spray instead of using paper muffin cup liners. My brownie bites ended up sticking to the pan.
Not to worry! I scooped them out, plopped them into paper liners and frosted them with homemade buttercream frosting (tinted green for St. Patty’s Day!)
TA DA! They are pretty and yummy and just a little messy to eat, but who cares??? My daughter was VERY happy.
Then, it was on to the Rustic Pizza Dough Mix. I just have to say again, that this is the best gluten-free pizza dough I have had since going gluten-free.
It is so easy to whip up! I decided to make a thin crust, rectangular pizza instead of a thick crust, round one. I’m a little boring when it comes to pizza toppings. I’m not a huge pizza sauce fan and I’ve been trying to avoid a lot of tomatoes lately due to stomach issues, so I opted for olive oil, basil, oregano, mozzarella and black olives as my toppings. My favorite parts of a pizza are the cheese and the crust anyway!
My pizza came out great! I found it spread out into the cookie sheet very easily. The crust is crunchy and chewy and you can pick it up with your hands to eat it!
I ate three slices and still have a lot left to put in the fridge to eat later.
As before, even though these mixes are gluten-free, I need to tell you that they are packaged in a facility that processes wheat, soy, milk, eggs & tree nuts, for those of you who may be sensitive to that. I have eaten these products several times and haven’t any problems, but everyone is different.
